A year and a half and a new school


Lots of changes have been happening here.  It’s been a long year and a half.  B and S changed schools this year.  They are enjoying it a lot.  Lunches haven’t changed much.  We have found some multigrain chips that have oat fiber in them but we all seem to tolerate.  They are healthy with no colorings, preservatives or other bad stuff.  They are from http://www.foodshoudltastegood.com.  Many days, my lunch is a serving of chips and a serving of hummus.

I have lots more to report and will as soon as I get recipes up at Living Gluten-free.

Thursday

As Spring Break approaches, I am branching out trying to expand what the girls will eat. They have gotten really picky lately and it seems soup and scramblers with chips is their mainstay. This week we are trying celery with pb, cucumber sticks, donuts, mango, papaya and a new casserole I just posted on http://www.nurtured.com/glutenfree. I am hoping to do a lot of baking next week while off and having new ideas for you then.

Wednesday

Ham sandwiches have been a mainstay this week. But, I did discover a recipe at the about.com low carb section (many GF recipes there) and modified it. It works great for leftovers for lunches. Check it out at Living Gluten and Dairy Free

Friday

I know it has been a while. My health problems are really problems. There are some days where basic functioning is difficult. But, it does keep me focused on making sure my kids get the best food for them. And, I am hoping my gut heals. My malabsorption issues are pretty bad.

Lunches are mostly unchanged. They are taking microwavable food on Thursdays as we have to be at school extra early on Thursdays now. So, all non-perishables are packed on Wednesday night and just juice is handled on Thursday mornings. This is nice and I am trying to keep up with packing non-perishables on weeknights rather than in the mornings. But, lately, my energy is zippo after 4 p.m. It is best at about 6 a.m. I am still working on a variety of muffin recipes lately with few successes. Well, I mean I like them or S likes them but not B. I guess I need to post the ones any of us like as you may like them too.

Wednesday

I made chicken soup last night. It went over so well, it is packed for lunches today. It was so easy. Boil your favorite noodles. In a large soup pan, saute onions. Add cooked chicken (I had leftovers from a chicken we did on the rotisserie Sunday). Add 1 can each of drained green peas and whole kernel corn. (Carrots would be good do but had none cooked. Frozen would do also). Spice as desired. I used garlic, cajun spice, poultry spice, pepper and salt. Add chicken broth to cover and simmer until noodles are done. Drain noodles and add to soup. Serve.

Wednesday

Lunches have not changed much here lately. Tomato soup, scramblers and meat rolls are pretty much standard right now. I am working on a pumpkin muffin recipe. S likes it a lot but I think it needs more taste and B won’t touch them. I am trying to find a soup S will eat. B loves soups. If you have any suggestions that don’t include tomato, vegetable or chicken and rice, let me know.

Thursday

Well, today we made a few changes. B took Imagine Foods Organic Creamy Tomato soup. It is gluten free and dairy free. I was also able to get green seedless organic grapes again. Both took those. S had egg salad. Both of them also took apple “cobbler”, bananas and orange juice. I was pleased to offer them new variety today. It has been a long time since they had soup or hard-boiled eggs.

Tuesday

Well, now I understand why I have had so little energy for . . . well, everything but especially coming up with lunches and blogging about it. My Dr. called after some bloodwork. I am B12 deficient. Celiac is one cause of being B12 deficient so now I can get tested.

 Anyway, lunches have not varied much from the fare discussed already. Scramblers went to school today. Hot dogs and dipping sauces went yesterday. Snacks have consisted of banana muffins, Envirokids bars, grapes, baby carrots and chips. We are really in a rut and I would like to get out.

Thursday

Ok, now I remember, we have tried noodles for lunch. They don’t work. They get very cold not matter how long boiling hot water sits in the thermos before filling. Hmph!

Today’s lunch was the ever-favorite scrambler. I tell you I am really running out of ideas. I have been at this for 4 school years. Why can’t I remember their favorites? Have they changed? Probably.
